Why Milkfish
The brewing of the soup base is a laborious endeavour; the soul of the nourishing soup comes from the fish’s gelatinous belly fat, pork bones and chicken, which after hours of boiling, skimming and reducing, distill into a creamy consistency with a delicate and sweet flavour.
The milky emulsion and sweet taste inherent in milkfish also eliminate the need to add any milk, keeping it accessible to people with dairy sensitivities.
A tomato soup base is also available.
